Job Functions:

o        Constantly monitor staff performance in all phases of service and job functions, ensuring that all procedures are carried out to departmental standards

o        Coordinate the development, interpretation and implementation of hotel policies, operating procedures and training programs, manuals, directives, menus, work schedules, rules and regulations for Sommeliers

o        Develop new techniques of service towards maximum guest satisfaction at minimum operating costs

o        Establish par levels for supplies, wine and equipment, completing requisitions to replenish shortages or additional items needed for the anticipated business

o        Provide leadership in the development and monitoring of wine operations, fiscal budgets, and marketing strategies to produce both short-term and long-term profitability

o        Support the Vice President and Director Food and Beverage in the development and implementation of the strategic plan and vision for the wine program consistent with the company’s objectives

o        Provide leadership and direction in the execution and measurement of guest service standards within wine and beverage operations to ensure continued growth and profitability

o        Ensure all policies, procedures and practices are consistent with the company’s core service standards and brand attributeso        Develop and maintain effective communications between all operating departments

o        Review POS pricing / maintenance issues to ensure proper amount is in the system

o        Utilize Avero to maximize sales, drive profits and control costs

o        Perform other management duties as assigned

o        Maintain complete knowledge of and comply with all departmental policies, procedures, and standards

o        Anticipate guests’ needs, respond promptly and acknowledge all guests, however busy

o        Maintain positive guest relations at all times

o        Be familiar with all hotel services/features and local attractions/activities to respond to guest inquiries accurately

o        Resolve guest complaints, ensuring guest satisfaction

o        Maintain complete knowledge of: all brands, particular characteristics and description of every wine/champagne by the glass and major wines on the wine list, designated glassware and garnishes for drinks, all bar menu items, preparation method/time, portion sizes, garnishes, presentation and prices

o        Maintain complete knowledge and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving

o        Review sales and beverage costs for previous day

o        Review weekly work schedules in accordance with staffing guidelines and labor forecasts, adjusting schedules throughout the week to meet the business demands

o        Assign work and side duties to staff in accordance with departmental procedures

o        Monitor and handle problems with intoxicated guests and/or altercations

o        Monitor guest reactions and confer frequently with service staff to ensure guest satisfaction

o        Other related duties as necessary 

Qualifications:Required:

o        At least eight years of service experience in a fine dining environment

o        Five plus years of supervisory experience

o        At least four years of wine and beverage service experience

o        Excellent knowledge of all beverage products, menu items and equipment used to perform these duties

o        Completion of Court of Master Sommeliers Advanced Course

o        Complete knowledge of health and safety regulations

o        Possess a High School Diploma and Formal education with a degree in a related field or equivalent work experience

o        Excellent communication skills, and able to read and write English

o        Able to work a flexible schedule

o        Individual must have excellent organizational skills; be able to function under time constraints and deadlines with attention to detail

o        Must possess effective listening abilities and be able to make strong judgment calls

o        Ability to access all areas of the facility
